Robert’s Modeling Chocolate Recipe:
Weigh out compound white chocolate in grams and divide that amount by 4.5. Next weigh out the calculated amount in corn syrup. Melt chocolate slowly in microwave using heat of the bowl to melt it (do not overmelt) and then let it get back close to body temperature. Then mix in the corn syrup taking care not to overmix. Make a flat pack of the mixture in a ziplock and put it in the freezer for ten minutes (if you go too long you’ll need to microwave briefly to warm it back up), then knead smooth.
